I can’t stop thinking about French toast and I have no idea why! I’m a pancakes and waffles kind of girl, but lately cinnamon French toast has been occupying my thoughts whenever I’m craving a sweet breakfast dish.

3 weeks ago, before I caught the flu, I found an easy, mess-free, recipe on the Food Network website for French toast that can be made in the microwave. I’ve made this recipe 5 times and it’s easily become my new go-to breakfast treat. If you’re a college student who only has access to a microwave, someone who is working with a tight food budget, or a beginner in the kitchen, this recipe is perfect for you.

French-Toast-Mug

Ingredients:
1 slice of bread
1 large egg
1 tablespoon of maple syrup
¼ cup of milk
½ tablespoon of melted unsalted butter (optional)
1 teaspoon of ground cinnamon
1 pinch of salt

*This recipe can be tweaked if needed, so feel free to make any changes to it that will accommodate your diet. I personally use sourdough bread, lactose free milk, and 1 tablespoon of ground cinnamon.

Equipment needed:
1 large microwaveable mug or 1 medium sized microwaveable bowl
Microwave

Directions:
1. Slice the bread into small cubes.

2. Mix the egg, milk, maple syrup, melted butter, cinnamon, and salt together in a large microwaveable mug or a medium sized microwaveable bowl.

3. Place the bread cubes into the microwaveable bowl and coat them with the liquid mixture. Make sure that all the bread cubes are thoroughly soaked with the liquid mixture.

4. Microwave the bread mixture on high heat for 2 minutes.

5. Carefully take the French toast out of the microwave with a pair of oven mitts and let it cool for 2 minutes.

6. Enjoy!

In non-food related news, I have 2 more days left of work and 6 more days left of college before I’m off for winter break! I apologize for the lack of blog posts and YouTube videos, but I have to put school and work as my top priorities at the moment. Once December 6th rolls around, expect more blog content!

Also, I was asked by a reader if I’m doing blog-mas (blogging every day until Christmas) this year and my answer is… I don’t know! Blogging every day is quite a commitment and because I don’t finish my exams until the 5th, I’m not sure if I’ll be able to commit to a blog writing/posting schedule. I’ll see how the next few days go and try to come up with a compromise!

If you’re in the same boat as I am with work and school, hang in there. You’ve got this! Good luck and remember, you’re so close to the finish line.

Keep smiling,
Kels
